Wow. Chef Diego Gallegos farms his own fish and manages to turn every dish into a real taste experience (by dolloping caviar on everything). In terms of dishes, this is one of the better one-Michelin-star restaurants I've been to. The wine pairing could have been better: not every dish came with a matching wine. Overall, very impressed.
